Since water boils at 212 degrees F (except at higher elevations) you can determine the thermometer's accuracy by placing it in water that's just beginning to boil. Mine reads about 195 in boiling water, therefore I know to add approximately 15 degrees to get an accurate reading of what I'm cooking. I also use it to monitor the temperature on my grill.
